Two things: pace and geography. With 2 nights you're not watching the clock on Day 2 — the morning is genuinely free and unhurried. And the cruise can reach Bai Tu Long Bay on the second evening, anchoring in near-solitude in a zone that 1-night itineraries simply cannot reach.
